What’s the difference between grass-fed and pasture-raised/free range?

 Grass-fed is about what the animals eat (grass). 100% Grass-fed animals eat only grass from birth to harvest. Pasture-raised is about where the animals live and eat (a pasture). Pasture-raised/free range animals may be fed grain in colder months when pasture is not available, so not all pasture-raised/free range animals are 100% grass-fed. Our New Zealand beef is 100% pasture-raised/free range and 100% grass-fed.

What’s the difference between Iberico and Iberico de Bellota?

Both Iberico and Iberico de Bellota Pork come from a breed of pigs from the Iberian Peninsula in Spain – a legendary breed that produces incredibly delicious tender, succulent, nutty and sweet meat. The difference is in the pigs’ diet. Iberico pigs are pasture-raised with a natural diet of grain, corn, wheat, acorns, grass and forage. Iberico de Bellota pigs are pasture-raised, eating grass and forage until acorn season which is the end of November – February. For their last 3 months, they gorge themselves on acorns, developing extra marbling and fat that is especially sweet, unsaturated and melts in your mouth. 

What’s special about Heritage Berkshire Pork?

The Heritage breed of Berkshire Pork, also known as Korubuta, comes from a special breed of pig originally bred for royalty in England and later brought to Japan (Kurobuta is Japanese for “black pig”). While conventional pork in the US has been long been bred to reduce fat content and mislead health-conscious consumers, Heritage Berkshire Pork is bred as the nature of the animal was intended, with extensive marbling, so it is much more tender, juicy and flavorful when cooked.

How is the Ovation lamb from New Zealand different than commodity New Zealand lamb?

Ovation’s farmers are paid a premium to select the best animals, ensure they are 100% pasture-raised and 100% grass-fed, and treat them with care and compassion throughout their lives. No hormones or antibiotics are administered. At the time of harvest, same day processing minimizes animal stress. All of this adds up to the superior lamb that carries the Ovation brand name.

What does D.O.P. mean?

The D.O.P. designation (Protected Designation of Origin) -- often highlighted by a red and yellow seal on the package --  certifies that the product has been made using traditional production methods by local artisans in a designated geographic area and are of the highest quality.

What is the Del Re brand?

In the rich history of Italy, when Kings, Dukes and Counts owned the land, the farmers would carefully pick the best of crops of each harvest to be set aside “per il re”, or “for the king”. Hence developed the brand Del Re, “of the King”, which brings you the highest quality products by working in close association with farmers and manufacturers throughout Italy, selecting the finest, most fertile land and constantly monitoring the harvests. The Del Re brand upholds Italian Tradition, but instead of the highest quality being available to only a few individuals, it enables everyone to be able to enjoy a king’s meal.

Where do you deliver?

We currently deliver to all 50 US states.

How will my meat and seafood be packaged? Will it stay cold?

All perishable items are packed in insulated containers and include safe, re-useable ice packs to ensure your items stay cold. All perishable items are shipped overnight to ensure they are cold upon arrival.

How long will it take for me to get my items?

Once your order has been processed, you will receive an order confirmation. From that point, perishable meat and seafood items will be shipped via FedEx Standard Overnight. Charcuterie items and cheeses will be shipped via FedEx Express Saver with delivery 2-3 days by end of day after your order ships. Non-perishable items will be shipped via FedEx Ground and should arrive within 5 business days depending on where you are located. You can absolutely track your order at www.fedex.com/en-us/tracking. Remember a signature is required for delivery of perishable items! Please note, orders placed after 2PM PST on Friday will likely be processed on Monday.

Can I track my orders?

Yes. You will receive tracking numbers for your orders via email once your items have shipped.

What is your return policy?

At Wilder Gourmet, your satisfaction is our #1 priority! We do absolutely everything to make sure all of your items arrive in top quality condition. In the unfortunate event there is a problem, please send an email to customerservice@wildergourmet.com with the following items listed below so we can review your claim to either replace the item or issue a refund.

  • If the package itself is damaged so that it has affected the quality of your items, please send us photos so we can address this with the carrier. Please include your order #.
  • If there is an issue with fresh product you have received and you identified this problem within 2 hours of receiving the product (as was detailed in your order confirmation), please provide photos of the unsatisfactory product, a photo of the packaging/label clearly identifying the manufacturer and lot #, and a written description of the problem with the product. Please include your order #.
  • If there is an issue with frozen product you have received, please provide photos of the unsatisfactory product as soon as it has been thawed for use, a photo of the packaging/label clearly identifying the manufacturer and lot #, and a written description of the problem with the product within 30 days of receipt. Please include your order #.
  • If it is determined you deserve a full refund, this will include both the cost of the product and the original shipping charges.
  • If there is a need to send a product back to Wilder Gourmet, we will cover the return shipping costs.
