This Speck is produced in South Tyrol by true artisans according to a generations-old recipe and historic traditions. It is seasoned with juniper berries, rosemary, oregano, bay leaves and garlic, then lightly smoked and cured in the fresh mountain air. The flavor is mild, balanced and a little nutty. P.G.I. (Protected Geographical Indication) assures the quality, characteristics and reputation of the product is attributed to a particular geographic area. Speck can be sliced thin and included in antipasti, wrapped around sweet fruits or layered in sandwiches. It also holds up well in cooking and gives dishes a smoky flavor similar to bacon, but without all the fat.
